You may use your Gmail labels as temporary reminders to take some sort of action—or even as a way to tell Zapier to trigger a workflow. Now Zapier can automatically remove a label from an email when you don't need it anymore.
Let's say you have a Zap that triggers for every email labeled "Needs Response." But once the Zap has triggered, you want to remove that label. Add the "Remove Label from Email" action to your Zap, and you'll complete the process in a single, automatic workflow.
